LALF: When Baby Boo’s away, Mama will Sleep.

Your not going to believe me.

But I haven’t had this little one with me since Wednesday night…

My mom and dad have her and are beyond excited to spoil her with toys and love.

You could call it a birthday present, or you could say that Mama, after one to many sleepless nights from a teether, has now become a walking zombie..

Since I have had no Baby Boo, at first I just kinda sat there and cried..haha I just am so used to having her around, I didn’t know what to do with myself.

Then, after my full first night of sleep, I realized that I really needed this time to sleep, having me time, and sleep.

Oh and spend time with this lover boy 🙂

Don’t mind our sweaty-ness.

We had just gotten back from a 2 mile run UP.A.HILL.

Whenever I exercise with my hubby, he always pushes me past my comfort level.

Like to the point of throwing up.

This..Makes me Love him/ Hate him.

More so love him because for my birthday, Hubby and Baby Boo woke me up to a Green Smoothie.

I was shocked because it was the most delicious Green Smoothie I have ever had. APPARENTLY it had milk, rainbow chard, spinach, strawberries, peaches, and banana..

I still don’t believe him.

I think there was a little love in there too.

Then we met my parents at an Indian Food restaurant.

Everyone was kind of skeptical, but It was MY day, and they were gonna eat what I wanted. 🙂

I enjoyed an assortment of goodness,

Along with one to many bites of delicious Naan Bread,

Hubby was a little bit nervous, but he fell in love instantly.

Then we said our goodbyes to Baby Boo and my family.

I may or may not have shed a tear..

But I know Baby Boo is in good hands.

Now I am sitting here at 9 in the morning, just woke up, snuggled in a blankey, and sipping my Green Smoothie..

And I may or may not have eaten chocolate this morning too..

Because it’s LIVE A LITTLE FRIDAY..

Maybe I’ll go get a pedicure, or take a bath, or read some magazines, or bake…

My Way Taco Salad

Tomorrow is my birthday…

I think.

You see, at this moment I’m lost and confused as to the day, time, my name, when the last time I washed my hair, If I ate breakfast this morning, and what load of laundry I am on..I think it’s number 6.

To say my life is organized and completely under control is like saying I’m 6 ft. tall with blond hair, voluptuous lady lumps, and a great sense of style..

And if you didn’t get that last part, I’m 5’3″ with brown hair, no lady lumps but one huge hump, and I’ve seriously considered hiring a personal stylist.

And then today…

I’ve locked myself in the garage 2 times, and almost a 3rd.

. The first time was a close one, and Baby Boo was sleeping. Luckily for me I caught myself before I did. The second time I officially locked Baby Boo and I in the garage for a good hour until hubby got home, so we entertained out selves with the water hose…

And the third time, hubby was home and I again managed to lock myself in, so I banged on the door so loud that China could hear me..Except my hubby. Sports center was on..And men can only focus on one thing at a time..At least that’s what my mom always taught me.

Then to top it off I stepped in gum earlier in the day, and judging by it’s size, it was chewed by Godzilla.

And without noticing, I got in my car, starting driving, only to find my foot sticking to the peddles…Due to the Gum.

Everywhere..

And I won’t lie, I’m a little worried to scrape it off in fear of catching rabies or something like that..

(Have I ever mentioned how dramatic I can be?)

And now that I am sitting here, really praying for a hot warm bath, I can’t help but look forward to tomorrow. Because birthday’s are special..

Birthday’s mean spoiling..

And birthday’s mean..

Oh..

What I Ate Wednesday, BIRTHDAY addition..

MY WAY Taco Salad

Serves two

Ingredients:

Lettuce

Tomatoes

Avocado

Goat Cheese

Roasted Pepita Seeds

Roasted Corn (Recipe Below)

Lentil “Taco Meat” (Recipe Below)

Cinnamony-Cumin Salad Dressing (Recipe Below)

Directions:

(Roasted Corn)

1. Take an ear of corn and lightly coat with butter, 2 tsp. chopped garlic, and a sprinkle of salt and pepper.

2. Wrap corn in tin foil and bake in a preheated 350 degree oven for 30 min. Then undo the foil, and put back in the oven for another 15 minutes. When done, take a knife and cut down the sides of the corn to get the little corn off. Set aside.

(Lentil “Taco Meat”)

1. Take 1 TB. Chopped Garlic, 1/2 C. Diced onion, and 2 TB. EVOO. Heat oil in pan, then add garlic and onion. Cook and stir for about 5 -7 minutes, or until a little golden. Lower heat to medium-low, then add 1 1/2 C. cooked lentils into pan with 1.5 TB. Taco Seasoning.

I made homemade seasoning, recipe from HERE.

2. Cook for an additional 5 or so minutes, add a sprinkle of salt and pepper, remove from heat, and set aside.

(Cinnamony-Cumin Salad Dressing)

recipe from: Eat Drink and Be Vegan

1/4 C. EVOO

2 TB apple cider vinegar

2 TB Lemon Juice

1 tsp. Dijon Mustard

1/4 tsp. cinnamon

1/8 tsp. cumin

1/2 tsp. salt

Directions:

1. Blend all ingredients into a blender.

Salad Assembly

1. Start with the lettuce, avocado, corn, tomato, goat cheese, pumpkin seeds and Lentil Meat.

2. Drizzle with dressing.

This Taco Salad was made MY way, but obviously you could do it YOUR way. Add what ever toppings you desire, such as sour cream, cilantro, chips, Peanut Butter (i dunno)..etc

I also paired this salad with Butternut squash seasoned with cinnamon and cilantro.

Now, if you will excuse me, I am off to eating my weight in watermelon.

Oh..

and a slice of Chocolate Cake at every meal.

That is unless…

I get stuck in the garage again..

Oh if we lived in a world of Greens and Pinks…

My husband calls me crazy, especially when I asked him If I could spray paint this beat up side table that we found at a garage sale for 3 dollars…

Green Covered Fruit Bowl

Slightly Adapted from : The Kind Diet

Ingredients: (Fruit)

2 C. Mixture of Seasonal Fruit of Choice (I used strawberries, peaches, mangos, and blackberries

1/4 cup cereal (Recipe called for Kamut, but I didn’t have it, so I used a blueberry crunch cereal that we had)

2 TB. Coconut

Ingredients for the Green Dressing:

1 tsp. Spirulina

1 1/2 TB Non Dairy Milk

2 tsp. Peanut Butter

1 TB Orange Juice (I didn’t have so I used Mango Juice)

1-2 TB Pure Maple Syrup

Directions:

1. Add fruit and cereal in a bowl and set aside.

2. Mix dressing ingredients together until smooth/creamy. It shouldn’t be super thick or super liquidy.

3. Pour dressing over fruit, cereal and coconut and stir until everything is coated.

4. Enjoy The Green!

This has got to be my favorite thing besides Green Drinks…

Seriously?

Chocolate Raspberry and Lemon Blackberry Macaroons

What happens when you live a little?

You don’t worry so much about picking up the toys on the floor 57 times a day. Instead you relax, sit on your hiney and play.

And while your sitting on your hiney, playing with toys you notice something in the nooks and craneys of the floor all covered with hair and dust…

Your toothbrush, which ironically has been missing for two days..

Living a little also means skipping on teeth brushing..If you didn’t know.

And then there is your kids.

We hussle and bussle them, making sure they know their ABC’s and 123’s, are coloring in the lines, and prompting them to keep  their food in their mouth and not on their shirt or the floor..

But do we let them live a little?

Hopefully so.

If that means letting them eat edible play dough even though you will most likely have to dig out a big chunk stuck to the roof of their mouth…

At least they can say they have done it.

Then at that time you will realize you can let them feel grown up and feed themselves, rather than spoon feed…even though without teeth there still isn’t much finger foods safe enough to eat…

And surprisingly you will learn things, while living a little.

Like the fact that your daughter loves tofu, and so do you. It’s soft, safe, and edible to eat which in turn makes you one happy Mama.

Now, while your Baby munches Tofu, you suddenly crave sweets.

You really want to bake, but you keep thinking about this hot summer weather, and the fact that you are going to have to get into a bathing suit sooner or later.

It can not be avoided no matter how hard you try.

But you keep thinking about sweets, and you don’t care what anyone says, nibbling on carrots just ain’t gonna cut it.

And then you realize.

Life is about living.

And you know that if you deprive and restrict your self 100% of the time, your setting yourself up for failure.

The more you tell your self NO, the more your going to feel YES.

And eventually you break in…give up…and fail.

So you say to yourself..

Today, I am going to live a little..

Today I am going to Bake and Eat…

Blackberry and Lemon Macaroons

Recipe By: Raxy

Changes to the original recipe: Subbed coconut extract for Lemon essential oils.

And you won’t stop there because you can’t have a day of ‘Living a Little’ without some chocolate!

Almond Chocolate Raspberry Macaroons

Adapted from Blackberry Lemon Macaroons 

2 C. Unsweetened finely shredded coconut

1/2 C. Almond Flour

1 TB + 1 tsp. Cocoa Powder

1/4 C. Coconut Oil

1/2 C. Maple Syrup

1/3-1/2 C. Mashed Raspberries

1 TB Coconut Milk(or other Non dairy milk)

1 tsp. Almond extract

dash of salt

Directions:

1. Blend all together and form into balls. Dehydrate 4 hours @ 105. OR set oven to lowest temp setting and watch carefully while macaroons bake.

And then your day is complete… 🙂

Well…Your day is, but it seems someone else still has some party left in her…

Pumkpin Chai Chia Pudding with Cinnamon Raspberry “Ice Cream”

Glass is half empty..Not half full..

When it rains..It freaking pours.

Not just raining on my parade, but snowing, windy, tornado-ing on my freaking parade.

And..

Blah Blah Blah ain’t gonna happen unless a Fat Lady is singing her great big heart out..

I’m a drama queen.

Laugh all you want, but if there is a scratch on my shin you bet your little hiney I’m wining to my Mama telling her how I will never ever ever be able to wear shorts again, and most likely should never leave the house until that scratch is gone.

Is that a true story?

I dunno, I’m kind of an exaggerator too.

So you see, yesterday I set out to bake brownies. ME of all people should be able to bake brownies.

But then, I got a little crazy and started throwing in random ingredients that most brownies don’t have,(but, I think should) and the end result came out okay…

BUT Hot Dang All Mighty they sure didn’t taste like a brownie.

So of coarse I cried, not over spilled milk, but cruddy brownies, and swore to everyone who could hear me that I would never ever ever cook again…

Unless a fat lady was singing.

And as I dramatized the whole scenario for my Hubby when he got home, he in no way humored my dramatic rant and instead told me ,”Honey, why don’t you try and look at the positive things in life..instead of all the negatives.”

Slap.In.The.Face.

Why are husbands always right??

(SHH DO NOT tell him I said that.)

How can I sit here and complain about poopy brownies, when I am so incredibly blessed to have the things that I have?

Slap again.

SO I quickly gathered what pride was left of me, and told my Hubby in return for is words of genius-ness I was going to make him the best afternoon snack he had ever had.

Fat lady singing or not…

Chai Chia Pudding with Cinnamon Raspberry “Ice Cream”

*For the Pudding*

1/2 C. Pumpkin Puree

1/2 C. Non Dairy Milk

2 TB Chia Seeds

1 scoop Vanilla Chai(or reg. Vanilla) Protein Powder

1 tsp. Cinnamon

1/4 tsp. Nutmeg

1/4 tsp. Ginger

1/4 tsp. Allspice

*For the “Ice Cream”*

1 Frozen Banana

1/3 C. Frozen Raspberries

1 C. Spinach

2 TB. Non Dairy Milk

1 tsp. Cinnamon

Directions:

1. Mix all ingredients for the pudding in a bowl until combined then set in fridge.

2. Blend “Ice Cream” ingredients into food processor until creamy. Remove Pudding from fridge, and get a tall glass/bowl.

3. Layer Pudding and Ice Cream until all are gone. Sprinkle with coconut if desired.

I prayed that this would make up for my little “episode” earlier..

And Luckily For me…

It did.

What do you get when you cross 3 days of rain + 1 Baby Boo + 1  Mama ??

Yogurt in the Bathtub: (Don’t even go there)

Peeling the skins off Chickpeas: (P.S. I was doing a spell check and realized I almost left the L out of Peeling…)

And the most delicious soup I have had to date:

Zucchini, Sweet Potato, and Cilantro Soup

Recipe by: 101 cookbooks.

Changes I made from the original recipe:

-Instead of Potatoes I used Sweet Potatoes

-Added an extra 1/2 cup cilantro

-Added seasonings: Cumin, Paprika, Salt, and Pepper

-Topped with Roasted Pumpkin Seeds and Drizzled with “Cheeze Sauce”

-“Cheeze Sauce idea from OhShe Glows: 1/4 cup hummus, 1-2 TB non diary milk, and 2 TB nutritional yeast all mixed together.

Best. Soup.Ever.

Warm, inviting, delicious, comforting, creamy, and did I say delicious?!

Oh, and if you must know, the yogurt in the bath tub had to do with a dumb idea on the internet.

It was an “edible” finger painting activity that turned into an episode of wipeout..

and no not Baby Boo…

Butternut Squash Pizza Crust-Healthy AND Gluten Free! :)

Let’s talk about Pizza.

I tried to make pizza one time when I was in middle school..

To this day my family hasn’t let me down from the shame. Want a little cooking tip?

‘When a recipe calls for a package of yeast, that means a little teeny tiny package…

NOT a costco size package.’


Ever since then, I just can’t get pizza dough right. I let it rise, but it never does.

I use whole grain flour but it’s too whole grainy.

And it’s never flaky..it’s more like a dense brick of carbs.

It really tickles me off, because I love pizza, but I most definitely don’t want to resort to a $5-10 Hot N’ Ready To Go To Your Thighs Pizza…

So what’s a diva to do..(Diva/Drama Queen-Same Thing)

This question, along with my prayers, were answered when I was on Jess from Healthy Exposures blog (Beautiful Girl.Beautiful Pics.Yummy Food.Check her out!) She talked about this sweet potato pizza crust that she found on Rawxy (Foxy Raw to be exact! She is amazing! Delicious Recipes too! Check her out also!!)

I was in AWE…To say the least. I had to make it.

So I did! I didn’t have sweet potato, but I had butternut squash, so I tweeked it just a tad…And You want to know the best parts!!

Completely Delicious!

Butternut Squash Pizza Crust with Veggie Toppings and Raw Parmesan Cheeze

Adapted from Rawxy

*Gluten Free, Vegan*

(For the crust:)

1 Cup Butternut Squash Puree

1/2 cup Coconut Flour (Can sub any other flour, but the amounts may be slightly different)

1 cup Brown Rice Flour

1 TB EVOO

1 TB Baking Powder

1 TB Dried Rosemary

Dash of salt

Directions:

1. Place all ingredients into food processor with dough blade. Combine until a dough ball forms. Roll out dough on prepared baking sheet or pizza stone. You can use all the dough, or wrap half  up and save it for later.

2. Then top with desired toppings. I started with a homemade cilantro avocado hummus.

Then an array of veggies, and of coarse olives. I also included shredded zucchini, carrots, tomatoes, broccoli, and chickpeas.

Next, I added the most amazing and delicious Raw Parmesan Cheese, recipe also from the amazing Rawxy!

1/8 cup pumpkin seeds + 1/8 cup cashews + 1/4 cup nutritional yeast blended together into fine crumbs..A-maz-ing!

When ready, bake at 400 for 20-25 minutes, or until edges are brown/crispy.

Pretty much the only way I want to eat pizza from now on 🙂

Tonight was girls night since my Hubby is knee deep in studying, so I shared some with Baby Boo because the crust was perfect texture for her little gum-less mouth! She loved it!

Now we’re off to do more girly things..

I don’t care how little hair she has, I’m gonna find a way to curl it! 🙂

The Rules of Food and Market Inspired Wrap

People that know me, would probably say I am good at following the rules.

Scratch that..

I am good at following certain rules.

Scratch that again…

I am great at following the right rules, and it is I who determines which rules exactly are the right ones..

(You would think I wear the pants in my marriage…not yet I don’t…)

You see, I feel I am a good enough person where I can determine which rules are important in my life to hold on to, and which rules I feel I am able to slide on every once in a while..

Problem is, the rules I slide on, always come back to bite me in the bootay…

So technically, I really don’t know what I’m doing..I just am to stubborn to admit it.

And there is a certain someone constantly reminding me…

Today, I realized I have slacked in the Mama department.

I know I know, how can someone as perfect as me be any less than an amazing Mama??..

Let me explain.

People always told me, don’t pick up your baby every time she cries..

I thought, how cruel..of coarse I will pick her up, I love her..

10 months later, I have learned to put on mascara, chop vegetables, and get dressed all with one hand and a baby on my hip..

I heard rules about teaching your baby to put themselves to sleep…

But I enjoyed rocking Baby Boo at two in the morning, catching up on reruns of Family Matters..

10 months later..I no longer like Family Matters, and 2 a.m. infomercials for pajama jeans have never looked so sexy.

And last, but definitely not the least of them,

I was told to never give into pouty faces…

But somehow with each little curl of the bottom lip, I find myself holding a needy baby at two in the morning, wishing I was wearing Pajama Jeans…

And I have never been happier.. 🙂

Although, if there is ONE set of rules that I almost always follow, its the Rules of Food.

I am pretty strict when it comes to what I put into my body, unless Death by Chocolate is staring at me in the face..But other than that I consider my self a stickler. So when I came across THIS book at my local library, I JUMPED for joy, silently, and checked it out in a hurry! I love Michael Pollan, and I couldn’t wait to dig into it.

What this book does is simply lay out the rules of eating..What, where, how much, what kind etc..

It’s a SUPER easy read, I finished it within 20 minutes, because it’s just a sentence a page.

Here are some of my favorites 🙂

  1. DON’T EAT ANYTHING YOUR GRANDMOTHER WOULDN’T RECOGNIZE AS FOOD. (EXAMPLE OF SOMETHING LIKE GO-GURT)
  2. AVOID FOOD PRODUCTS THAT NO ORDINARY HUMAN WOULDN’T KEEP IN THE PANTRY. (ANYONE ELSE NOT HAVE AMMONIUM SULFATE?)
  3. AVOID FOOD PRODUCTS CONTAINING INGREDIENTS A THIRD GRADER COULDN’T READ
  4. AVOID FOODS ADVERTISED ON TELEVISION
  5. EAT ONLY FOODS THAT HAVE BEEN COOKED BY HUMANS
  6. IF IT CAME FROM A PLANT, EAT IT. IF IT WAS MADE IN A PLANT, DON’T.
  7. EAT ANIMALS THAT HAVE THEMSELVES EATEN WELL.
  8. EAT LIKE AN OMNIVORE
  9. DON’T EAT BREAKFAST CEREALS THAT CHANGE THE COLOR OF YOUR MILK
  10. PAY MORE, EAT LESS
There are a total of 64 rules, that are all, I believe, important to follow.
One of my favorites was that he talked about getting out of the grocery store, and buying food, fruits, veggies,and snacks from local farmers markets. Supporting our local farmers, all the while eating fresh and wholesome food. 🙂
So I took dear old Pollan’s advice, and went to the farmers market on Saturday!
And I actually didn’t spend the Hubby’s life savings, despite what he says..
I only spent 30 dolla’s!! I got a 3 pack of strawberries, two HUGE bunches of Swiss chard, 2 lemons, 4 zucchinis, HUGE bunch of cilantro, 2 lb bag of cherries, 2 tubs of hummus, bag of vegan pesto, and broccoli the size of my head times three! Pretty good I think. All organic, all locally grown 🙂
And when I got home, I made my self a market inspired wrap.
Start with a Hugh Jass piece of Chard…
Then add your desired dressings.
I did Beet hummus and vegan chipotle pesto from the farmers market.
Then add your abundance of veggies,
I used carrots, tomatoes, apple slices, cucumbers, bell peppers,cilantro, squeeze of lemon, walnuts, and avocado.
Then roll that bad boy up…
Biggest Beefy (not really) veggie wrap known to man…
I enjoyed these with some SUPER sweet cherries and strawberries!
And the possibilities are endless. You can add meat, garbanzo beans, any other veggies, goat cheese…
What ever your precious little ba-donk-a-donk desires!
Now despite all that I said about rules I should have listened to, Baby Boo and I make a pretty good team…
Because we follow the most important rule of them all…
Just.Have.Fun.

New Beginning-Detox

About a month before Baby Boo was born, I quite my job. I knew that I wanted to be a stay at home Mom, so there was no need for me to continue working. My plan was to take that time off and get ready for my new Baby, as well as rest as much as possible, because I knew I would have lack their of in the coming future. (Little did I know a lack their off would continue ten months later.)

Before I knew it I was bored. I had folded and refolded new born onesies, read more than enough about what to expect when the baby was born, and I wasn’t even getting any sleep since Baby Boo found the right side of my rib cage the most comfortable position.

I called my mom complaining, saying how much I wished Baby Boo would get here just so I could have something to do.

My mom told me to enjoy my time, because I would never.be.bored.again.

I laughed.

‘haha Mom what do you know??’

Ten months later…

My mom knows everything.

I have complained before about the lack of showers, lack of sleep, lack of clean house, lack of sleep, lack of cut clothes, lack of sleep..

So you obviously know I am no longer bored.

Tired..Not bored.

And although I wouldn’t have my life any other way, time flies, and before you know it your way behind in laundry, haven’t had a solid workout in a while, and your food is less than stellar..

So that is why I decided it was time for a..

New Beginning

Sometimes we just need to rejuvenate and refresh ourselves, all the while, starting over.

I need to repair my self and strengthen my mentality, my spirituality, my physicality, my emotions(lord knows I have many), and my overall health and wellness.

I re-evaluated and re-adjusted some of my goals, and I am ready to move forward and make myself a better Ari 🙂

Today I am going to talk about Goal Number 1:

Personal Detox/Cleanse

The reason I say ‘personal’ is because I have adapted this detox plans to fit my own personal needs that are best for me and my body. If you are considering a Detox, talk with a doctor, and weigh out all your options. Remember, I am not a doctor.. 🙂

  • Why A Personal Detox/Cleanse: It’s not just the overload of Sugar that has encountered my life in the past few days, but I have also recently felt bloated and crampy. I always eat well, but I feel it’s best to give my digestive system, as well as my whole body a good clean out, and a break. There is a great website that talks about the benefits of a Detox, Alaina Rose shared this with me and you can check it out HERE.
  • What’s the Plan: The plan for me is to stay away from Dairy, Meat, Gluten/Wheat, refined sugars, processed foods, and soy. Oh and Chocolate. (Tear). Most of these will be pretty easy to stay away from, but what I have noticed the most difficult to be is Wheat, Chocolate, and Soy.
  • How is it coming? : I didn’t realize how much my diet often consisted of carbs and…chocolate, until now. I am so happy I am doing this, because it’s helping me realize what I have been putting in my body, even when I thought I was doing a great job.
  • What have you been eating: Delicious.Delicious.Food. I am here to say that you can eat yummy clean food, all the while not sacrificing hunger and taste.
To start of I have had a fresh squeezed juice every day.
Sweet Blackberries Juice
3 carrots, 1 cucumber, 2 apples, 1/2 cup blackberries


Fresh squeezed juice can be kind of scary, but this one I feel would be GREAT for Newbies!
Newbies like Baby Boo..
She loved it! She kept wanting more..Little juice hog!
There also has been PLENTY of Green Smoothies 🙂
I cannot live a day with out one..
Chocolate Covered Berry Smoothie
1 cup rice milk
2 cups spinach (or greens of choice)
1/4 frozen raspberries
1/4 cup frozen Blackberries
1 frozen banana
chocolate protein powder(raw/vegan)
2 TB chia seeds

PB & Blueberry Green Smoothie
1 cup rice milk
2 cups spinach
1 frozen banana
1/2 cup frozen blueberries
1 tsp. Peanut Butter
1 tsp. Vanilla
1/2 tsp. Xanthan Gum
2 TB Chia Seeds


This one taste like a PB & Jelly Sandwhich crossed with Blueberry muffin!
For snacks I have stuck with alot of fruits and raw veggies, but every once in a while I’ll crave something a little different.
Rice cake with a little bit of PB and homemade sugarless jelly!
Sugar-less Jelly?
How do you do that??
Quick Homemade Sugar Free Jam
1/4 cup raspberries
1 TB Chia Seeds
Mash together…and spread!
*If you want something a little sweeter like Jelly, feel free to add a little of agave/maple syrup.*


For main meals such as dinner and lunches, I try my best to include lots of veggies, protein sources from lentils and nuts and seeds, and a little bit of Gluten Free Carbs.
A salad I enjoyed today was a Kale Salad.
Kale can be somewhat scary, but I promise you it’s not. Kale is known to help aid in the detoxification process 🙂 It also has tons of nutrients, antioxidants, aids in digestion, and tons of vitamins.
Lemony Kale Salad
2 cups Kale
Juice from 1/2 Lemon
1 tsp. Olive Oil
Salt and Pepper
Massage ingredients into kale until coated. Top with desired salad toppings. I did:
Blackberries
Tomatoes
Almonds
Carrots
Cranberries

*Goat cheese would be YUM YUM on this salad as well..Or some lemony chicken…Or Both!*
I have also been roasting a bunch of veggies to have on hand when needed.
I have even cooked up some brown rice, lentils and beans, and quinoa to throw in salads, wraps, and soups.
Like this salad, which is a bed of spinach, italian spiced quinoa, and roasted veggies!
I topped it with THIS sauce, but instead of using the pepper the recipe called for, I replaced it with sweet corn.
I loved it!! Sweet, yet Savory!

As for now I’ll continue to sneak hidden healthy tid bits in his food every so often…Kind of like what you do with 5 year olds..
Probably the hardest part of this whole detox has been the lack of sweets. It’s not like I pig out on sweets every day, but I always grab a bite of dark chocolate here and there to satisfy my craving..
I was beginning to worry I wasn’t going to be able to do it for two weeks..
That was until I created this little angel…
Vegan.
Gluten Free.
No Sugar.
No Dairy.
Detox Friendly.
And taste like chocolate..

Chocolate Peanut Butter & Ganache Birthday Cake

What happened to the days when we were kids and all we did was play and run around?

We would  ride our bikes, play games, sports, you name it…

We were active.

Then, I guess somewhere in time we grew up. We got jobs, we met boys, we were busy with school, and the term ‘play’ only happened a couple times of year when we had vacation.

Some of us continued to stay active, working out after classes and jobs, and even keeping active in other recreational activities…but that slowly disappeared when real life hit us smack in the face with families and kids.

Then the time we used to keep active simply went to diaper changing, taking care of kids, and making dinner..

And then before you know if your here:

And those once used often running shoes sit in the corner of the floor…

Alone. Abandoned. Stinky.

And then we do silly things like buy new workout clothes, because we think it will motivate us to get back into the swing of things…

When in reality instead of sweating it out on a nice run outside, it’s stuck being worn indoors mopping floors, that are coated in powdered sugar.

Powdered sugar that was used to make 300 of these,

And then this, which has been staring at me in the face all day!

Hubby’s Birthday Cake. Peanut Butter Chocolate Ganache Cake to be exact.

Every time I walk by I want to face plant right in and inhale its delicious goodness..

Plop!

The every day hustle and bustle of life has a way of pushing important priorities to the side because there simply isn’t time.

Time to exercise is what I am talking about.

I wasn’t always one of those people that would say, “I don’t have time to work out.”

I would simply think, “Well, make time!”

But now with every day responsibilities, I find myself finally sitting down at 930 at night thinking..”Where did the day go by. I didn’t even accomplish half of what I wanted to…

And if there is something I have learned with exercise and being a Mama, is that It’s harder to focus on ME when my life/my whole day is spent focusing on everybody else. How can I possibly take time out for me, when I have a million things to get done at home?

Sacrifice.

If there is one thing you should know it’s that Mama=Sacrifice.

Sometimes sacrificing showers, makeup, new clothes, clothes with out Boo Doo Doo, time with your husband, time with friends, meals, exercise…etc..

Sacrificing HouseWives of O.C and staying up until 12 to watch it, just so I can get up in the morning to go work out.

Sacrifice.

Sacrificing computer time so I can accomplish what really needs to be done, so I can have time to exercise.

Sacrificing for a purpose to make time. Take a look at your life and find where you could make adjustments to fit time in for you. You will be happier, a better mother, a better wife, and a great example to those around you.

BUT…Remember. Some days are better than others..

Some days, your baby or hubby is sick..

Or your baking 200 cupcakes and making a wedding cake for saturday…

And somedays, your Italian Stalion Juice Head Guido of a Hubby is celebrating his 27th birthday…

Sometimes…Exercise may have to be sacrificed…

For cake.

Because, there is nothing wrong with living a little.. 🙂

Especially when it involves Chocolate and Peanut butter…

Chocolate Chip Peanut Butter Cake with Peanut Butter Frosting & Chocolate Ganache

Ingredients:

*Chocolate Cake-Recipe HERE. The only difference I made was add 1/4 cup peanut butter into the batter. I then baked accordingly, except dividing batter into 3 different pans, so I would have 3 layers.*

*Peanut Butter Frosting*

Ingredients:

1 cup Butter(room temp)

1/2 cup Peanut butter

1 TB Vanilla

3-5 Tb Heavy Whipping Cream

4-5 cups Powdered sugar

Directions: 

1. Beat room temp butter and Peanut butter until Creamy. Add about 4 cups of powdered sugar, vanilla, and 3 TB whipping cream and beat until combined and creamy. Batter will be pretty thick. Add more whipping cream to reach desired consistency. If you think it could use more powdered sugar, go ahead and add it, but u might have to increase the whipping cream.

*Chocolate Ganache*

Ingredients:

2 cups Dark chocolate chips

1 cup Heavy whipping Cream

Directions:

Over a double Broiler, melt chocolate and cream until combined and creamy. Set aside for about an hour.

**Cake Assembly**

1. Start with one layer of cake. Spread some PB frosting to coat top of Layer, then add about 1/4 cup or so of ganache and coat top of frosting. Add second layer of cake, and repeat with frosting and ganache. Add third layer and coat entire cake with peanut butter frosting. Then Drizzle ganache all over cake, then with a spreading spatula, blend ganache with PB frosting, to make a marble looking effect, like so…

Store in cool air tight container. If in the fridge, the ganache will harden like a candy bar.

This cake should probably come with a warning label.

Warning:

One bite with this cake, and you will most likely go into a foodgasmic coma…

If your anything like me, you will ask Hubby to wish that his birthday could happen once a week, just so we could eat this cake…

He wished for something else…
