Why People Think I am So Weird

I have had my fair share of embarrassing moments in my life.

From loudly boofing during silent reading in 5th grade, to my bathing suit top falling off in a wave pool at my 8th grade end of the year swim party…

Some things you will just never forget.

And some people will never let you forget either.

Like the time in highschool when a couple of friends and I were reading a brochure on Hawaii, and learned what Pearl Harbor really was.

Thanks to everyone filling me in, I learned that Pearl Harbor was NOT a SHIPΒ IN Japan that was BOMBED by the Japanese…

Or the time when I loudly shouted for all to hear that they should look at the birds sitting on the beach…When in reality they weren’t birds, they were rocks. I got glasses a couple weeks later.

Or maybe, we should talk about the time where someone told me I needed to change my blinker fluid in my car, and so I called a repair shop and asked if they had different colors for blinker fluid, because I really wanted pink.

And lastly, I’ll never forget being compared to Jessica Simpson for buying canned Tuna, only wanting Chicken..Because the dang bottle said Chicken of the Sea..

(And if you ask me, I think it’s rather stupid it says that. Chicken cans don’t say Fish of the Land)

I think you get the idea.

But recently, I haven’t been reminded of Flashing Teeny Boobes, or Fish in a can, it’s my cooking that tends to be the butt of every joke.

Everything from Vegan, to tree huggers, to organic freak, to heath nut..I’ve heard it all.

And for a while I was starting to worry that it was stopping people from being friends with me. I mean, who wants to hang out with someone that loves gaseous spinach and takes pictures of it…

Well my friends..Are you out there??

Because things are about to get a little more embarrassing when you find out what I put in these muffins…

Spinach and Squash Muffins w/ Lemon Glaze

*Despite the name, these are actually fairly sweet. No one would even guess they were good for you…AND that they contained Spinach and Squash.*



1 C Whole Wheat Pastry Flour

1/2 C Coconut Flour (or WHP)

1/2 tsp. Baking Soda

1/2 tsp. Baking Powder

1 1/2 tsp. Cinnamon

1/2 tsp. Nutmeg

1/2 tsp. Ginger


2 C. Fresh Spinach

2 Small Yellow Squash finely grated (about 1 C. worth)

1/3 C. Organic Cane Sugar

1/4 C. Applesauce

1/4 C. Canola Oil

1/4 C. Non Dairy Milk


1. Mix dry ingredients together and set aside.

2. Using a food processor, add spinach and pulse until finely pureed/chopped. Add spinach plus the rest of the wet ingredients into a bowl and mix until combined.

3. Add wet to dry and fold until combined. Do not over mix.

4. Preheat oven to 350, and when oven is hot and ready, scoop batter into muffin pan (Can top with coconut) Β and bake for about 20 minutes, or until center comes out clean and edges are golden.

Lemon Glaze:

1/2 cup powdered sugar

1 tsp. lemon juice

1 tsp (maybe more) water


Mix until combined. Drizzle on muffins.

Making/Keeping friends is getting more difficult every time I bake..

But if it’s any consolation, my Hubby had two of these fresh out of the oven smeared with butter…

And he still loves me..

And he loved the muffins..

And he also loves donuts…

Luckily for me, Hubby is stuck with me Forever..

He has no choice but to accept that if it involves me..

It ain’t gonna be normal!

    I love all your stories of being silly or made fun of. We all have those moments, for sure. I’m a bit strange myself, I eat huuuge salads and I knit and I love books more than television. Hey, we gotta love what we got, don’t we!

    I think you are brilliant – does that count for anything? πŸ™‚ I just need to get some coconut flour so I can try these. I use coconut for quite a bit of stuff (i.e. water, milk, and oil) and some people freak out on me saying I will get cancer – has this happened to you?

    Haha, I totally agree with the comment up higher… These muffins make me want to be your friend more πŸ˜€ And if there’s someone out there without those kind of embarrassing moments, they are the ones that aren’t normal. Honestly, who doesn’t? That being said I pride myself in being unique even if I get strange looks from my family members, haha. I try to keep it normal around people I don’t really know, but somehow I think they know anyways.
    That glaze looks amazing. I’ve been wanting to make something with a glaze lately, it looks so pretty πŸ˜€

    I still havent forgiven her for those.

    Oh Ari, I love this, and the muffins look awesome! Super creative! I probably lose one of my Texas friend each time I post food pics on facebook like vegan stuffed bell peppers.
